Is there any way to turn an item off in all views at once? For example, if I
create a topopgraphy, I only want to see it in one or two drawings and don't
want to go through all the other drawings to turn it off.

Not as of yet - however you can save your settings as a view template which
lets you quickly apply all view properties to a view.
