Which Revit template would be most appropriate when creating a custom
mullion profile? Should I use the one named Windows - Curtain Wall.rft, or
one of the Profile templates?

The custom mullions use Profile Families to get thier shape, therefor use
the Profile templates.
Windows - Curtain Wall.rft is for making a curtainwall panel that schedules
as a window.
