How can I calculate the landscape areas in a site plan?
Can I make a schedule to show the landscaping verse asphalt percentage?

Yes. You need to create a graded region. Then, a a schedule of topography can report the area of all the topography elements, including subregions, pads, split surfaces, etc

it's very simple, just select the areas(subregion, topography etc.) and assign appropriate names in the properties.
then you just need to create a topography schedule.

Another simple method:
Create Subregions depicting paved and unpaved areas.
Apply different Materials to the subregions.
Create a new Material Takeoff Schedule.
Done.
