Can you somehow setup a some sort of global variable that can be used across
differents in an assembly?
I know essentially "Adaptivity" is taking care of this business. But I want
to know how you can relate dimensions across different parts in an assembly.

One good method is to link to an Excel spreadsheet.
The same spreadsheet can be linked to any number of parts and Assemblies.
