Has anyone found a way to have an automatic field entry that will track the number of P&ID dwgs in a project so that then I could have the classic data of: Sheet 1 of 10, Sheet 2 of 10, etc

Not that I know of myself, off the top of my head. I’ll dig some more. If you were to provide a screen shot or two, maybe others in the discussion community will jump in as well.
Though this is done manually, it can be done quickly and efficiently, especially when the P&IDs are nearing completion and you’re certain the total number of P&ID sheets. As a place holder, the DWG Number could be “Sheet # of #” and then adjust at the end. (See attached image)

Actually the Drawing Number field probably isn't the best one to use since that's the field that is normally referenced by off-page-connectors. I recommend creating a user-defined/additional property to serve this purpose instead.
