I have a diamond pattern that needs to be a polyline and also needs
to be offset on each side of the diamond. When I create a
polyline out of one diamond pattern and then try to offset the polyline
pattern a certain distance on each side, it will only let me offset to one
side and not the other.
Any ideas as to why?

Yes post the drawing but I suspect the Offset to the small side makes the diamond too small to display or negates it and therefore does not exist.

The Polyline is continuous and essentially turning over on itself. Part of it is inside and part outside which is why it goes back and forth. MC Escher would be proud.
Try the Attached red Diamond. Work better?

It looks like it has something to do with the fact the 2 lines
in the middle of the diamonds actually cross over themselves,
so it won't allow it to do it.
Works fine here.
What is the Offset distance you are trying to use.

Yes that is mucking with it here as well when that small. A simple closed polyline of a single shape works fine.
Can you make the piece a single shape?
If I leave a small distance between the lines where the diamond pinches down it will work.

I can't have a space in the middle where they pinch. I also tried making it a BLOCK, but
you can't offset a BLOCK - Or at least I couldn't.
