PEDIT is the command you want.
Type it at the command line. Then press M for MULTIPLE.
Now selected all your lines. it will ask if you want to convert lines and arcs say YES, and hey presto they will turn into polylines.
Also if you want less polylines, after your lines have been converted you can use J for JOIN which will (as long as the ends touch) join two polylines together
