Example:
Existing polyline set to a width of 6. Want to fillet this to a non-polyline with a width of zero.
Currently the two lines will join to create a connected polyline but the original widths are maintained (6 and 0).
I am looking for the system variable where the non-polyline becomes joined and the global width for the new segment matches the first polyline.

Are you sure because that's the way it's been working for many years and all of a sudden it's not working (within the last few weeks).
IThere must be a system variable for polyline joining that associated all new segments to match the original polyline!

I just checked:
In AC 2007 when you join (or fillet) polyline with width assigned greater than 0 and line object, than resulting polyline takes width from polyline - exactly as you write. But when you fillet (join) two polylines (one with width=0 and the other with width>0) - than the width of segments stays different.
In AC 2012 .... 2014 the width of attached polyline segment never changes when filleting (joining) with line or with polyline.
Seems that there was something changed in AutoCAD itself since 2007 release.
