As a new user of AutoCAD Electrical I was interested in knowing if the program is smart enough to know that if a coil is defined as having only two N.O. contacts, will it let me insert a third N.O. contact for the same parent coil?

If you define the pin list, ACE will provide a warning dialog that you are exceeding the contact limit. You can override that and instert it anyway if you want to.
On the right side of the Insert/Edit dialog box there is a button for defining the pins, with brief instructions for the format.
