Honestly, I think that could all be done. Just not right out of the box.
For one thing, as you have discovered, probably very few of the symbols you need are included. So, like us, you'll have to do a lot of custom symbol creation. And you'll have to enter most all of your parts into a catalog.
I see this is an old thread, but I just wondered (since it popped back up) if you ever found a solution to your needs?
Ok, this is an old thread but I am surprised there is not more comments here. I am an electrical engineer and I can't make heads or tails out of this app. Why create a product if you are not going to make it user friendly. I get that it is intended for electrical application rather than electronic. However, many of the concepts as EE's know are similiar in electronics at a smaller scale. Anyhow, I am simply trying to illustrate electrical connectivity between a circuit board and a rigid connector and after a few 2 weeks I still can't do that. Can someone point me to any video or training resource for getting started. Typically all I need to see how to create a simple circuit and I can run with that. Can anyone help... Also note, I am using Inventor 2015 and wouuld like to create circuit boards for my Invetor designs. I have also tried using the BIM Exchange, but either my default configuration does not point to a libarary with parts/connectors, or I need to download some.
Why convert somethng thats not designed for the job when all these open source electronic design circiut projects are freely avalable ?

AutoCAD Electical was designed for Industrial use (i.e Workcells, Control Panels, control schematics).
You can use it to do Circuit boards I guess, but why?
As Colin pointed out there are programs designed to do circuit boards already.
If you want to make a simple repersentation (just a small step up from Viso), then you can access the Elecronic Components in the Schematic Icon menu the components are located under "Electronics" (click on Miscellanous first, then select Electronics)
See the Screenshot below.
Just drop the Electronics on the "wires" (in your case you would use the Wires as your trace path).
