During process of setting up IEC menu and Icon menu, lost info for default JIC settings.  How do I reset to default settings?

It sounds like you selected IEC as your default standard. That's okay. Just go onto control panel>programs and features and select AcadE 2014. Run the Add/Remove/Change function and select the JIC library as a secondary. I would suggest NFPA over JIC though. NFPA is more up to date.
