1) Where are the controls for the little arrows that show up on surface
profiles?
2) Where are the controls for the slope/grade labels that show up on surface
profiles. I have a surface profile with many grade labels jumbled together,
and would like to delete some grade labels but leave others. Is this
possible?

Select the surface profile
Right-click for context menu, select "Edit Profile Style..."
Switch to the Display tab
Edit the "Arrow" display component as you please
You can also do the same thing by switching to the Settings tab in the
toolspace (SHOWTS if not visible), then navigate to Profile > Profile
Styles and then the style you want to edit.
In the online help, go to Autodesk Civil 3D Help > Autodesk Civil 3D User's

This is controlled by the label style.
Select the surface profile
Right-click for context menu, select "Edit Labels..."
Edit the "Lines" label component by editing the parameters in that
component, or by editing the style associated with it. This controls the
slope labels on the profile. You can control the start/end stations and
interval for the slope labels, and set a "weeding" factor if you want to see
fewer labels.
Edit the "Grade Breaks" label component by editing the parameters in that
component, or by editing the style associated with it. This controls the
grade break labels.

Guide > Profiles > Profile Labels and Label Styles
