Is it possible to tag alignments and then put the bearing/distance data and curve data in an alignment table?

Yes.
The label style has a component for the Table Tag. On the general tab of
the label style, you can choose whether to display the label as a Tag or a
Label. If you select tag for the Display Mode, the tag is used as an index
into the table. You can also select the label directly, and Civil 3D will
create a child style with the Display Mode switched to Tag.
You then need to create a table style which has the appropriate properties
fields in the table. There are a few table styles in the content we ship.
There are 4 types of tables: Line, Curve, Spiral and Segment. The Segment
table is a combo table which supports combinations of Lines, Curves and
Spiral entities.
