Does your plotter have a white cartridge? Usually white is produced by not having any ink on the white paper. While mixing colors to produce white is theoretically possible, I don't think most plotters could handle that. I've often used the 0% shading to produce "white" text on an aerial background. The only reason that this would not work is if you had your pens set to Merge.
