When I open the expression variables available in a label style, I see different options available for different label styles.

 Can I combine expression variables from different label types?  For example, say I want to make an expression that takes the Surface Elevation from a spot elevation label and subtract a variable from a pipe variable such as end invert elevation?

If you can do this, were can I find the expressions file on my computer or network?  Can they just be dragged and dropped between label styles?

The Help is a good place to start to become familiar with Expressions and yes there are different options for various style types and some have none available. You're pretty much limited to the parameters available for a given style type. But as an example a parameter within a Structure Style Expression is Surface Elevation at Insertion Point.
