For labels, is the font decided in the general tab under text style or in the text component editor under the format tab? Are there overrides? There seems to be multiple locations for fonts choices when creating a label and I can't find a nice black and white answer.

All right, thats good. How can you tell if is is overridden. If I change it in the general tab will it synv to the component text editor? Is there a check box for override? Does the check box shown below mean the 120 is overriding the 140 from the Profile settings, or underneath the 120 is an override?
That check box says that the style you are using is overriding a parent setting. If you right click on the drawing name in the settings tab and choose "Edit Label Style Defaults", you can set the text style here. If you then go into a specific style and change it for just that one style, the style is overriding the drawing setting.
Within the style itself, I don't think there is any way to tell if a piece of text is assigned a different font then what the text style uses other then to look at the actual value of the text itself. If you see something like the following, there is an override in the value of the text:
