Best method to offset 3D Polylines

I have a survey that only contains shots for the centerline of a gravel road and I need to offset the points and linework for the shoulders in order to create a surface for volume calculations.  There is no design just this centerline pickup which is my original survey and then a recent asbuilt which will be my new surface for comparison.  I tried the offset command but it told be that all the objects had to be on the same plane.

 

So which would be the best method to offset the linework and points in order to have the software determine grade for the corners properly.

I suggest using gradings instead of offsetting the polyline. Convert the polyline into a feature line, then apply gradings to both sides using a distance target according to the offset you need. Another benefit to using gradings is when you create a surface from the gradings it will have automatic boundaries.

The Stepped Offsset command will do what you need.
