Add a function to a label style?

Is there a way I can add a macro or formula in a label style definition?

 

For instance, I'd like to show the difference in elevation for the ends of a line and whether it's a cut or fill without having to do everything manually.

It sounds like you're looking for information on expressions.  You should be able to use them to build labels to do what you describe.
