Is there a way to adjust the size of the cells in my line and curve tables?

Well, as an answer for AutoCAD-tables: click onto the table, then you'll get grips to modify the cell-/row-/column sizes

That wording makes me thinking that you are speaking about Civil3D (then please check >>>that forum for Civil3D<<< for your next question, this here is for plain AutoCAD). In case of Civil3D you can click onto the table ==> right click for edit table style (might be better to copy that style first) and in the second tab you see the list of columns and you can set the widths for each of them to automatic or to a manual value.
