Can't plot in black and white only color

I know there is a one word command for when this happens. We have a drawing we received from an architect an no matter what we select it won't print in black and white. Can anyone help me with the command that wipes out the architects penstyles?

When you plot the drawing set the CTB or STB of your own so you know what the results will be.

don't know what this means.....we did this before someone gave us a one word command and it whiped out what ever the setting the architect put in was.
